Samui Wining & Dining
One Year On
In the twelve months since it opened, Chef’s Table restaurant at Sareeraya has gone from strength to strength.

3Sareeraya Villas & Suites is a newly-built luxury resort in the northern end of Chaweng Beach. Just over a year ago, Hans Engerer was brought in as Executive Chef and we interviewed him then to find out more about the man and his vision for the Chef’s Table restaurant. One year later and Hans and his team have put the restaurant firmly on the culinary map – and introduced some exciting culinary experiences for real gourmets.

Hans was born and brought up in Germany where he started his culinary apprenticeship. Over the next twenty years he went on to work in London with the Chez Gerard Group, was head chef of Café Fish in London’s West End, spent time as the production head chef at the Dorchester Hotel and also worked with corporate event planners like Tony Page, Alison Price and Anton Mosimann. The latter involved catering for the British Royal Family at Buckingham Palace, Windsor Castle and St. James’s Palace. He also owned and ran his own restaurant for four years in the 1990s and spent a year travelling in 2005/2006 in what he describes as, “A busman’s holiday! I wanted to experience everyday foods as well as fine-dining in places I’d never been to. I started off in New Zealand and Australia and then went on to Indonesia, Vietnam, Cambodia, Laos and, finally, Thailand, including a trip to Samui. There was just something about the island that captured my imagination and I knew I wanted to live and work there.”

>And, fortunately for us, he did just that. Over the last year he’s refined the menus, introduced weekly themed events and put together some stunning packages centred on food. “There’re really three new concepts outside of the new dinner menu, the first is a seven-course romantic dinner menu; the second is a three-day ‘Culinary Gourmet Package’; and the third a seven-day ‘Culinary Retreat Package’. They’ve all been very well received and we’ve had exceptionally good feedback on them.”

As you can see, there’s been a great deal of thought gone into the menu. And I’m sure you can picture a table for two on a quiet beach with just candle-light, the moon and the stars to illuminate the night.

Should you have a couple of days then the ‘Culinary Gourmet Package’ might be just what you need. Indulge yourself and your partner with flawless Thai hospitality in a setting that reflects the unique culture and nature of Samui.

  • Day 1: Arrive in the morning or afternoon; be shown to your room and greeted with VIP canapés and a refreshing welcome drink. Unpack and relax at the pool until the evening when you will be greeted with flower garlands and a glass of Kir Royal followed by a 7-course romantic dining menu surrounded by candle-light on the beach.

  • Day 2: After a feast at the sumptuous breakfast buffet, where you can enjoy Western and Asian specialties, you will be given an introduction to the art of Thai cuisine. The senior Thai chef will guide you through your Thai cooking class where you will learn to prepare traditional Thai food. After you have enjoyed your cooking class and had lunch you will be free to laze around the pool or go on a shopping trip.

  • Day 3: In the morning you can relax with breakfast in bed or on your balcony and chill-out before moving on to your next destination.

It also includes round-trip airport transfers in a private chauffeur driven car and two nights’ accommodation in your chosen room category. For those with a little more time, and appetite, then the seven-day ‘Culinary Retreat’ will be an incredible experience. This also includes round-trip airport transfers in a private chauffeur driven car and six nights’ accommodation in your chosen room category.

Learn hands-on how to carve flower bouquets out of fresh tropical fruits. From the afternoon onwards you are free to enjoy a cocktail or two at the ‘Read Red Bar’ or perhaps plan a big night out as you don’t have to worry about anything the next morning.

  • Day 6: After an extensive breakfast you can relax by the pool or in the spa. In the evening a seafood barbecue awaits you with fresh lobster and Koh Samui’s finest fish and seafood delicacies, accompanied by your favorite dips and side dishes.

  • Day 7: In the morning you can relax with breakfast in bed or on your balcony and chill-out before moving on to your next destination.

Many hotels and resorts claim to be the ultimate romantic destination. And others suggest culinary genius, but Chef Hans and his team have listened to what guests actually want and put together dining experiences to suit almost everyone. And that to me epitomizes true genius in hospitality and service.
